Pineapple-Apricot Sauce

One year when my children were in grade school, they prepared a Mother’s Day Banquet and we mothers were presented with a cookbook of the students’ favorite recipes. One of the recipes in the cookbook was the entrée for the banquet; Walnut Meatballs with Pineapple-Apricot Sauce.  It goes very well with my Walnut Oatmeal Patties.

Pineapple-Apricot Sauce

1/4 cup oil
1/4 cup lemon juice
3/4 cup pineapple apricot jam
1/2 cup ketchup
2 tablespoons brown sugar
2 tablespoons grated onion
1/4 teaspoon salt
1/2 teaspoon oregano
Dash of hot pepper sauce (optional)

Mix sauce. Simmer 10 minutes on low heat.

Note: The original recipe recommends baking the meatballs in the sauce. However, the meatball recipe I use is better baked then add the sauce and bake 20 to 30 minutes.
